Apple Crumble Cake

Ingredients

For the Cake:

700g apples - peeled, cored, chopped into 2cm cubes
couple of handfuls of blackberries (optional)
1 tbsp lemon juice
2tbsp plain flour
230g margarine
350g golden caster sugar
350g plain flour
4 large eggs
4 tsp baking powder

For the Crumble Topping:

180g soft brown sugar
150g butter
200g plain flour
1 tsp cinnamon

Method

Grease and line a cake tin (I use a 24cm square), preheat oven to 180 deg C
Blitz the crumble topping ingredients in a food processor
Toss apples and blackberries (if using) with the lemon juice and coat gently in the plain flour
Combine rest of cake ingredients in a food mixer and blitz until well mixed
Carefully fold apples and blackberries into cake mixture
Pour into prepared tin, sprinkle crumble mix over the top

Bake

For around 45 minutes until golden brown and inserted skewer comes out cleanish , cool in tin and cut into squares.
